With my easy banana loaf a firm favourite here, I’ve now branched out and added crumble top banana muffins to my repertoire, again, a recipe passed to me from my mum.
I love finding recipes like this. The kind of bakes that you know you can make over and over again and they will always be a hit.
I find that we always have the ingredients in the cupboard ready to go for these. We are also a household that is never without bananas! Which is handy for both these crumble top banana muffins and that good old banana loaf.
As regular readers will know, I am not a baking queen, as I don’t have much patience for it. However, these never fail me and I absolutely love the smell of them baking in the oven.
To sum up, they are simply delicious, and so I thought I’d share their delights with you…
Crumble Top Banana Muffins Ingredients (makes 12)
For the muffins:
200g plain flour
1 tsp baking powder
1 tsp bicarbonate of soda
1/2 tsp salt
For the topping:
2 tbsp plain flour
1 tbsp butter
A pinch of cinnamon

Preheat your oven to 180c.
Pop 12 muffin cases into a muffin baking tray.
For the cakes, simply mix all of the dry ingredients together first. Melt the butter, and add that, along with the egg, to the mixture. Stir it all in thoroughly. Mash up the 2 bananas and then add those in, too. That’s your cake mix done, so spoon it evenly into the 12 muffin cases.
For the topping, rub your flour and butter together with you fingers. Add in the sugar and pinch of cinnamon and mix it all together. Sprinkle over the top of each of your cake mixes.
Bake in the centre of your oven for 30 minutes. Allow them to cool on a wire rack once baked, and then enjoy!
